INGREDIENTS

  • 1 cup shortening
  • 1 cup sugar
  • 1 cup packed light brown sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2½ cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 cups old-fashioned oats
  • 1 cup raisins
  • 1 cup coarsely chopped pecans (optional)

 

INSTRUCTIONS

  1. Prepare the cookie dough.
  2. In a large bowl, cream the shortening, sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs, one at a time, ensuring each egg is well incorporated.
  4. Stir in the vanilla extract.
  5. In a separate bowl, combine the flour, baking soda, salt, and ground cinnamon.
  6. Gradually add the dry ingredients to the creamed mixture, mixing until just combined.
  7. Stir in the oats, raisins, and pecans (if using), ensuring they are evenly distributed throughout the dough.
  8. Shape and bake the cookies.
  9. Preheat the oven to 350°F (175°C).
  10. Shape the dough into 1-inch balls and place them 2 inches apart on ungreased baking sheets.
  11. Using the bottom of a greased glass, gently flatten each ball of dough.
  12. Bake the cookies for 10-11 minutes or until they turn golden brown. Be careful not to overbake.
  13. Remove the cookies from the oven and transfer them to a wire rack to cool completely.
