INGREDIENTS

  • 2 medium zucchinis or yellow squash
  • 1/2 cup breadcrumbs (regular or panko)
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • Olive oil or non-stick cooking spray
  • Optional: dipping sauce (ketchup, ranch, or aioli)

 

INSTRUCTIONS 

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and dry the zucchinis or yellow squash. Cut them into evenly-sized fry shapes, similar to traditional French fries.
  3. In a shallow dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, paprika, salt, and black pepper. Mix the dry ingredients together to create a seasoned coating for the squash fries.
  4. In another shallow dish, beat the eggs until well-combined.
  5. Take a few pieces of squash at a time and dip them into the beaten eggs, ensuring they are coated on all sides.
  6. Roll the egg-coated squash pieces in the breadcrumb mixture, pressing gently to adhere the coating.
  7. Place the coated squash fries on the prepared baking sheet, leaving space between each piece to ensure even cooking and crispiness.
  8. Lightly drizzle olive oil over the squash fries or use non-stick cooking spray to promote browning and crispiness.
  9. Bake the squash fries in the preheated oven for about 20-25 minutes, turning them halfway through the cooking time. The fries should be golden brown and crispy.
  10. Once the squash fries are cooked to perfection, remove them from the oven and let them cool slightly before serving.
