INGREDIENTS

  • 2 cups fresh or frozen peaches, peeled and diced
  • 1 cup granulated sugar, divided
  • 2 cups heavy cream
  • 1 cup whole milk
  • 4 large egg yolks
  • 1 teaspoon vanilla extract

 

INSTRUCTIONS

  1. In a medium bowl, combine the diced peaches and 1/4 cup of granulated sugar. Stir well to coat the peaches and let them sit for about 30 minutes to release their juices.
  2. In a medium saucepan, heat the heavy cream and whole milk over medium heat until it reaches a simmer. Do not boil.
  3. In a separate bowl, whisk together the egg yolks and remaining 3/4 cup of granulated sugar until well combined.
  4. Gradually pour about half of the hot cream mixture into the egg yolk mixture, whisking constantly to prevent the eggs from curdling.
  5. Pour the egg yolk mixture back into the saucepan with the remaining cream mixture, whisking continuously.
  6. Cook the mixture over medium heat, stirring constantly with a wooden spoon or spatula until it thickens and coats the back of the spoon. This custard base should reach a temperature of about 170°F (77°C). Do not let it boil.
  7. Once the custard base has thickened, remove the saucepan from the heat and strain the mixture through a fine-mesh sieve into a clean bowl.
  8. Place the bowl in an ice bath, stirring occasionally until the custard cools to room temperature.
  9. Add the vanilla extract to the custard and stir well.
  10. Use a blender or food processor to puree the macerated peaches until smooth.
  11. Stir the peach puree into the cooled custard mixture until fully combined.
  12. Cover the bowl with plastic wrap, ensuring it touches the surface of the custard to prevent a skin from forming. Refrigerate for at least 4 hours or overnight.
  13. Once chilled, pour the peach-infused custard into an ice cream maker and churn according to the manufacturer’s instructions until the mixture reaches a soft-serve consistency.
  14. Transfer the churned ice cream to a lidded container, cover, and freeze for at least 4 hours or until firm.
  15. When ready to serve, scoop the Georgia Peach Ice Cream into bowls or cones and savor the taste of summer with each luscious bite.
