INGREDIENTS

  • 1 cup toasted pecans, finely ground
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 ounces semisweet or dark chocolate, chopped
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 4 large eggs, separated
  • 1 teaspoon vanilla extract
  • 1/2 cup brewed coffee, cooled

 

INSTRUCTIONS

  1. Preheat the oven to 350°F (175°C). Grease and line the bottom of a 9-inch round cake pan with parchment paper.
  2. In a mixing bowl, combine the finely ground toasted pecans, all-purpose flour, cocoa powder, baking powder, and salt. Set aside.
  3. Place the chopped chocolate in a heatproof bowl and melt it using a double boiler or microwave in short intervals, stirring until smooth. Set aside to cool slightly.
  4. In a separate large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  5. Add the egg yolks, one at a time, beating well after each addition. Stir in the vanilla extract.
  6. Gradually add the melted chocolate to the butter and sugar mixture, mixing until well incorporated.
  7. Alternately add the dry pecan and flour mixture and the brewed coffee to the chocolate mixture, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
  8. In another mixing bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the chocolate batter, ensuring the mixture is well combined.
  9. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  10. Bake the Chocolate Pecan Torte in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  11. Remove the torte from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  12. Once the torte has cooled, transfer it to a serving plate. Dust the top with powdered sugar, if desired, for an elegant finishing touch.
  13. Slice the Chocolate Pecan Torte into wedges and serve it at room temperature or slightly chilled. Pair it with whipped cream, a drizzle of chocolate sauce, or a scoop of vanilla ice cream for added indulgence.

  • To toast the pecans, spread them in a single layer on a baking sheet and bake in a preheated oven at 350°F (175°C) for 8-10 minutes, or until fragrant. Let them cool before grinding.
