Key lime pie is a beloved dessert that originated in the Florida Keys, where the small and tart key limes grow abundantly. INGREDIENTS

FOR THE ALMOND CRUST:

  • 1 ½ cups graham cracker crumbs
  • 1 cup finely chopped almonds
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

 

FOR THE KEY LIME FILLING:

  • 4 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup freshly squeezed key lime juice
  • 1 tablespoon grated key lime zest

 

FOR THE MARSHMALLOW TOPPING:

  • 1 cup marshmallow fluff
  • 1/2 cup heavy whipping cream
  • 1/2 teaspoon vanilla extract

 

INSTRUCTIONS

FOR THE ALMOND CRUST:

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch pie dish.
  2. In a mixing bowl, combine the graham cracker crumbs, chopped almonds, granulated sugar, and melted butter. Stir until the mixture resembles wet sand and all the ingredients are well incorporated.
  3. Press the mixture firmly and evenly into the bottom and sides of the greased pie dish.
  4. Bake the almond crust in the preheated oven for 8-10 minutes, or until it turns golden brown and fragrant.
  5. Remove the crust from the oven and let it cool completely before proceeding with the filling.

 

FOR THE KEY LIME FILLING:

  1. In a large mixing bowl, whisk together the egg yolks, sweetened condensed milk, key lime juice, and grated key lime zest until well combined and smooth.
  2. Pour the key lime filling into the cooled almond crust, spreading it out evenly.
  3. Bake the pie in the preheated oven for 12-15 minutes, or until the filling is set and no longer jiggles.
  4. Remove the pie from the oven and let it cool to room temperature. Then refrigerate for at least 2 hours, or until thoroughly chilled.

 

FOR THE MARSHMALLOW TOPPING:

  1. In a mixing bowl, combine the marshmallow fluff, heavy whipping cream, and vanilla extract.
  2. Using an electric mixer, beat the mixture on medium-high speed until stiff peaks form and the mixture becomes fluffy and light.
  3. Spread the marshmallow topping over the chilled key lime pie, creating swirls or peaks with a spatula for an attractive presentation.
  4. Return the pie to the refrigerator and let it chill for an additional 1-2 hours, allowing the flavors to meld and the topping to set.

 

NOTES:

  • For a toasted marshmallow effect, use a kitchen torch to lightly brown the marshmallow topping before serving.
