About

Brenda Gantt

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 cup finely chopped hazelnuts

INSTRUCTIONS

FOR THE PASTRY SHELL:

  1. In a mixing bowl, combine the all-purpose flour and granulated sugar.
  2. Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
  3. In a small bowl, whisk together the egg yolk and vanilla extract.
  4. Gradually pour the egg yolk mixture into the flour mixture, stirring with a fork until the dough comes together.
  5. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 1 hour.
  6. Preheat the oven to 350°F (175°C).
  7. After chilling, roll out the dough on a lightly floured surface to a thickness of about 1/8 inch.
  8. Cut out circles using a round cookie cutter or the rim of a glass that is slightly larger than the cups of a mini muffin tin.
  9. Gently press each circle of dough into the cups of the mini muffin tin, forming a pastry shell.
  10. Place the muffin tin in the refrigerator while preparing the filling.

FOR THE CHOCOLATE HAZELNUT FILLING:

  1. In a heatproof bowl, melt the chocolate chips using a double boiler or microwave in short intervals, stirring until smooth. Set aside to cool slightly.
  2. In a separate mixing bowl, cream together the hazelnut spread, softened butter, and granulated sugar until well combined and creamy.
  3. Add the egg and vanilla extract to the hazelnut mixture, mixing until smooth.
  4. Gradually add the melted chocolate to the hazelnut mixture, stirring until well incorporated.
  5. Stir in the finely chopped hazelnuts.

ASSEMBLY AND BAKING:

  1. Spoon the chocolate hazelnut filling into the chilled pastry shells, filling each one about three-quarters full.
  2. Bake the tassies in the preheated oven for 15-18 minutes, or until the pastry is golden brown and the filling is set.
  3. Remove the muffin tin from the oven and let the tassies cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
