Boston Brown Bread has deep roots in the history and culture of New England, particularly in Boston, Massachusetts. Its origins can be traced back to the colonial era, when cornmeal and molasses were staple ingredients in the region. The combination of these ingredients with whole wheat flour created a dense and flavorful bread that sustained many generations of New Englanders.

Traditionally, Boston Brown Bread was steamed in cans rather than baked in an oven. This steaming method was practical during colonial times when ovens were not always readily available. The cans were placed in a pot of boiling water, allowing the bread to cook slowly and retain its moisture.

Today, Authentic Boston Brown Bread continues to be cherished as a beloved part of New England cuisine, often served alongside hearty stews, soups, or enjoyed as a breakfast treat. Its robust flavor and dense texture make it a true delight for those seeking a taste of New England’s culinary heritage.

MAKES: 1 LOAF (12 SLICES) ½ cup cornmeal

 

INGREDIENTS

  • 1 cup whole wheat flour
  • 1 cup cornmeal
  • 1 cup rye flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1 cup molasses
  • 1 cup raisins (optional)

 

INSTRUCTIONS 

  1. In a large mixing bowl, combine the whole wheat flour, cornmeal, rye flour, baking soda, and salt. Mix well to ensure the dry ingredients are evenly distributed.
  2. In a separate bowl, whisk together the buttermilk and molasses until well combined.
  3. Gradually pour the buttermilk and molasses mixture into the dry ingredients, stirring with a wooden spoon or spatula. Mix until all the ingredients are incorporated and a thick batter forms.
  4. If desired, fold in the raisins to add a burst of sweetness and texture to the bread batter.
  5. Grease a 9×5-inch loaf pan or a set of small metal cans. Pour the batter into the prepared pan(s), filling them about two-thirds full. Smooth the top with a spatula.
  6. If using a loaf pan, cover it with aluminum foil. If using metal cans, cover each can with a double layer of aluminum foil. This will prevent water from seeping into the bread during the steaming process.
  7. Place the pan or cans in a larger pot or Dutch oven. Fill the pot with enough water to reach halfway up the sides of the pan(s) or cans.
  8. Bring the water to a boil, then reduce the heat to a simmer. Cover the pot and steam the bread for about 2 to 2 ½ hours, or until a toothpick inserted into the center comes out clean.
  9. Carefully remove the pan(s) or cans from the pot and allow the bread to cool for a few minutes. Then, remove the bread from the pan(s) or cans and let it cool completely on a wire rack.
  10. Once the bread has cooled, slice it into thick, hearty slices and serve it with butter, cream cheese, or your favorite spread. Authentic Boston Brown Bread is especially delightful when paired with New England-style baked beans or enjoyed as a breakfast toast.

 

NOTES

  • If you prefer a sweeter bread, you can increase the amount of molasses or add a touch of brown sugar to the batter. Additionally, feel free to experiment with additional mix-ins, such as chopped nuts or dried fruits, to add extra flavor and texture to the bread.
