The dish gained popularity in the casino culture that thrived along the shores of Narragansett Bay, where clams were abundant and local chefs sought to create unique and enticing appetizers to complement the lively atmosphere.

The name “Clams Casino” is said to have been inspired by the famous Venetian casino, the Casino di Venezia. The dish’s creation is credited to a chef at the Little Casino restaurant in Narragansett, Rhode Island, who aimed to capture the elegance and indulgence associated with the casino experience.

Over time, Clams Casino became a staple on seafood menus across the country, celebrated for its harmonious blend of flavors and textures. It has since become a favorite among seafood enthusiasts and is often enjoyed as an appetizer or as a part of a seafood feast.

INGREDIENTS

  • 12 fresh clams, preferably littleneck or cherrystone
  • 4 slices bacon, finely chopped
  • 2 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 1 small red bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup breadcrumbs
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley
  • Salt and pepper to taste
  • Lemon wedges, for serving

 

INSTRUCTIONS 

  1. Preheat your oven to 450°F (230°C). Scrub the clams thoroughly under cold running water to remove any dirt or sand. Place the clams in a large pot with a little water, cover, and steam them over medium-high heat until they open, about 5-7 minutes. Discard any clams that do not open.
  2. Once the clams have cooled slightly, carefully remove the meat from the shells and chop it into small pieces. Set aside.
  3. In a skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon with a slotted spoon and set it aside, leaving the bacon fat in the skillet.
  4. In the same skillet, add the butter and melt it in the bacon fat. Add the chopped onion, red bell pepper, and minced garlic. Sauté the mixture until the vegetables are tender and aromatic, about 5 minutes.
  5. Stir in the breadcrumbs and cook for an additional 2-3 minutes, allowing the breadcrumbs to toast slightly. This will add a delightful crunch to the filling.
  6. Remove the skillet from the heat and stir in the grated Parmesan cheese, fresh lemon juice, chopped parsley, and the reserved chopped clams. Season the mixture with salt and pepper to taste. The filling should be well-combined and moist.
  7. Spoon a generous amount of the clam mixture onto each clam shell, packing it lightly.
  8. Arrange the filled clam shells on a baking sheet and place them in the preheated oven. Bake for about 10-12 minutes, or until the breadcrumbs turn golden brown and the clams are heated through.
  9. Once the Calico Clams Casino are done, remove them from the oven and allow them to cool slightly. Serve them on a platter, garnished with the crispy bacon bits and accompanied by lemon wedges for squeezing over the clams.
