Betty’s Garlic Chicken with Cabbage

About

Brenda Gantt

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

INGREDIENTS

  • 1 whole chicken
  • 1 medium onion, chopped
  • 3-8 garlic cloves, or use garlic salt or garlic powder to your liking
  • Salt and pepper to taste
  • 1 head cabbage
  • 2 tablespoons butter
  • Pepper

PREPARATION

  1. Season chicken and place in slow cooker/Crock Pot. Add onion and garlic cloves and salt and pepper. Fill slow cooker/Crock Pot 1/4-way with water, cover and cook on HIGH for 4 to 5 hours. The chicken should be tender and falling off of the bone.
  2. During the last hour of cooking the chicken, cut up 1 head of green cabbage, core removed. Place cabbage in a large pot with a shallow amount of water — about 1/2-to 1 cup.
  3. Add two tablespoons of butter and sprinkle generously with garlic salt and pepper. Cover and cook on medium high heat for 20 to 30 minutes, until tender; drain.
  4. When chicken and cabbage are done, place some cabbage in a bowl and top with chicken and some of the chicken broth. You can adjust any of the seasonings and the butter.
