Vidalia onions, named after the city of Vidalia in Georgia, are renowned for their unique sweetness and low pungency. These onions are grown in the rich and sandy soil of the Vidalia region, which imparts a mild and sweet flavor profile. The growing conditions, including the region’s mild climate and low sulfur content in the soil, contribute to the exceptional taste of Vidalia onions.

The popularity of Vidalia onions gained momentum in the 1930s when a farmer named Mose Coleman discovered that the onions he had planted were unexpectedly sweet. News of these exceptional onions spread quickly, and by the 1940s, Vidalia onions were being commercially grown and shipped across the country.

Vidalia Onion Bake emerged as a delicious way to showcase the unique qualities of these sweet onions. This comforting side dish became a staple in Southern cuisine, making appearances at family gatherings, potlucks, and holiday meals. With its creamy and cheesy topping, Vidalia Onion Bake adds a burst of flavor and a touch of indulgence to any table.

INGREDIENTS

  • 4 large Vidalia onions, peeled and thinly sliced
  • 2 tablespoons butter
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste

 

INSTRUCTIONS

  1. Preheat the oven to 350°F (175°C). Grease a baking dish or casserole dish with butter or cooking spray.
  2. In a large skillet, melt the butter over medium heat. Add the thinly sliced Vidalia onions to the skillet and sauté until they become soft and translucent, about 10 minutes. Remove the skillet from heat.
  3. In a mixing bowl, combine the shredded cheddar cheese, mayonnaise, sour cream, grated Parmesan cheese, chopped fresh parsley, garlic powder, onion powder, salt, and black pepper. Stir the ingredients together until well combined.
  4. Transfer half of the sautéed Vidalia onions to the greased baking dish, spreading them out evenly.
  5. Spoon half of the cheese mixture over the layer of onions, spreading it out to cover the onions.
  6. Repeat the layering process with the remaining sautéed onions and cheese mixture, ensuring an even distribution of ingredients.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  8. After 30 minutes, remove the foil and continue baking for an additional 15-20 minutes, or until the top is golden brown and bubbly.
  9. Remove the Vidalia Onion Bake from the oven and let it rest for a few minutes before serving.
  10. Garnish with additional chopped fresh parsley, if desired, and serve the Vidalia Onion Bake warm as a delicious side dish.

 

NOTES:

  • Vidalia Onion Bake can be prepared ahead of time and refrigerated. Simply cover the dish with foil and store it in the refrigerator until ready to bake. Increase the baking time by 5-10 minutes if baking the dish straight from the refrigerator.
