Tomatillo relish is a tangy and flavorful condiment made from a combination of tomatillos, tomatoes, peppers, onions, and spices. This relish has a vibrant green color and a zesty taste that adds a burst of flavor to various dishes. With its origins in Mexican cuisine, tomatillo relish has a rich history and has become a popular accompaniment to grilled meats, tacos, and snack chips. The recipe below provides a step-by-step guide to preparing this delicious relish.

INGREDIENTS

  • 1 pound tomatillos, husks removed, quartered
  • 1 pound plum tomatoes, quartered
  • 2 medium green peppers, seeded and quartered
  • 1 medium sweet red pepper, seeded and quartered
  • 4 jalapeno peppers, seeded
  • 1 large onion, quartered
  • 1 whole garlic bulb, separated into cloves
  • ¼ cup fresh cilantro leaves
  • ¼ cup packed fresh parsley sprigs
  • ½ cup olive oil
  • ½ cup cider vinegar
  • 1 can (2¼ ounces) sliced ripe olives, drained
  • 4 teaspoons canning salt
  • 1½ teaspoons pepper
  • ¼ teaspoon crushed red pepper flakes
  • 4 tablespoons bottled lemon juice

 

INSTRUCTIONS

  1. In a food processor, process the tomatillos, tomatoes, peppers, onion, garlic, cilantro, and parsley in batches until coarsely chopped.
  2. Transfer the processed mixture to a large kettle or pot.
  3. Stir in the olive oil, cider vinegar, sliced ripe olives, canning salt, pepper, and crushed red pepper flakes into the kettle with the processed vegetables.
  4. Place the kettle on the stovetop over medium-high heat.
  5. Bring the mixture to a boil.
  6. Reduce the heat to low.
  7. Cover the kettle and let the mixture simmer for 20 minutes or until the vegetables are tender.
  8. While the mixture is simmering, prepare four pint-sized canning jars by sterilizing them.
  9. Add 1 tablespoon of bottled lemon juice into each hot sterilized jar.
  10. Ladle the hot tomatillo relish mixture into the jars, leaving a ¼-inch headspace at the top.
  11. Use a non-metallic utensil to remove any air bubbles from the relish-filled jars.
  12. Wipe the rims of the jars with a clean, damp cloth or paper towel.
  13. Place lids on the jars and adjust them securely.
  14. Process the jars in a boiling-water canner for 20 minutes.
  15. After processing, remove the jars from the canner and let them cool on a clean towel or wire rack.
  16. Check the lids for a proper seal before storing the jars in a cool, dark place.
  17. Tomatillo relish is versatile and can be served with grilled meats, tacos, or as a dipping sauce for your favorite snack chips.
