Chili ‘n’ Cheese Grits is a delicious and hearty dish that combines the flavors of creamy grits, tangy cheddar cheese, and zesty chopped green chilies. This Southern-style comfort food has a rich history and has become a beloved staple in many households. The recipe below provides a step-by-step guide to preparing this mouthwatering dish.

INGREDIENTS

  • 2 cups water
  • 2 cups milk
  • 1 cup grits
  • 2 egg yolks
  • 1 cup (4 ounces) shredded cheddar cheese, divided
  • ¼ cup butter, cubed
  • 1 can (4 ounces) chopped green chilies, drained
  • 1 teaspoon salt

 

INSTRUCTIONS

  1. In a large saucepan, bring water and milk to a boil.
  2. Add grits to the boiling liquid.
  3. Stir the mixture continuously over medium heat for approximately 5 minutes or until the grits have thickened.
  4. In a small bowl, beat the egg yolks.
  5. Take a small amount of the hot grits and stir it into the beaten egg yolks.
  6. Gradually add the egg yolk mixture back into the saucepan, stirring constantly to prevent scrambling the eggs.
  7. Add ¾ cup of shredded cheddar cheese, cubed butter, chopped green chilies, and salt to the saucepan.
  8. Stir the mixture until the cheese and butter have melted and all the ingredients are well combined.
  9. Grease a 1½-qt. baking dish.
  10. Pour the grits mixture into the greased baking dish, spreading it evenly.
  11. Sprinkle the remaining shredded cheddar cheese over the top of the grits mixture.
  12. Preheat the oven to 350°F (175°C).
  13. Place the baking dish, uncovered, in the preheated oven.
  14. Bake for 30-35 minutes or until a thermometer inserted in the center reads 160°F (71°C).
  15. Once cooked, remove the baking dish from the oven.
  16. Allow it to cool for a few minutes before serving.
  17. Serve the Chili ‘n’ Cheese Grits as a tasty side dish or a satisfying main course.
