INGREDIENTS

  • 1 can (15½ ounces) black-eyed peas, rinsed and drained
  • ¾ cup chopped sweet red pepper
  • ¾ cup chopped green pepper
  • 1 medium onion, chopped
  • 3 green onions, chopped
  • ¼ cup minced fresh parsley
  • 1 jar (2 ounces) diced pimientos, drained
  • 1 garlic clove, minced
  • 1 bottle (8 ounces) fat-free Italian salad dressing
  • Tortilla chips

 

INSTRUCTIONS

  1. In a large bowl, combine the black-eyed peas, sweet red pepper, green pepper, onion, green onions, minced parsley, diced pimientos, and minced garlic.
  2. Pour the fat-free Italian salad dressing over the pea mixture in the bowl.
  3. Stir the ingredients gently to ensure that the salad dressing evenly coats the pea mixture.
  4. Cover the bowl and refrigerate the Texas Caviar for 24 hours. This allows the flavors to meld together and enhances the taste.
  5. After the 24-hour refrigeration period, remove the Texas Caviar from the fridge.
  6. Give it a quick stir to ensure the flavors are well combined.
  7. Serve the Texas Caviar with tortilla chips as a dip or side dish.
