INGREDIENTS:

  • 4 small tomatoes, chopped
  • 4 eggs
  • 2 ham slices
  • 1 onion, chopped
  • 2 tablespoons cheddar cheese
  • Salt and black pepper, to taste

 

INSTRUCTIONS:

  1. Preheat the Air fryer to 390°F and grease an Air fryer pan.
  2. Place the chopped tomatoes in the Air fryer pan and cook for about 10 minutes until they soften and release their juices.
  3. In a nonstick skillet over medium heat, add the chopped onion and ham slices. Stir-fry for about 5 minutes until the onion becomes translucent and the ham is slightly browned.
  4. Transfer the cooked onion and ham mixture into the Air fryer pan with the tomatoes.
  5. In a bowl, whisk together the eggs, a pinch of salt, and a dash of black pepper.
  6. Pour the whisked egg mixture evenly over the tomato, onion, and ham mixture in the Air fryer pan.
  7. Set the Air fryer temperature to 335°F and cook for about 15 minutes or until the eggs are fully set and cooked through.
  8. Carefully remove the Air fryer pan from the machine and sprinkle the cheddar cheese over the cooked egg mixture.
  9. Let the cheese melt slightly from the residual heat.
  10. Dish out the cooked egg mixture onto serving plates and season with additional salt and black pepper if desired.
  11. Serve the egg scramble warm, and enjoy!
