Crispy Potato Rosti

INGREDIENTS:

  • ½ pound russet potatoes, peeled and grated roughly
  • 1 tablespoon chives, chopped finely
  • 2 tablespoons shallots, minced
  • 1/8 cup cheddar cheese
  • 3.5 ounces smoked salmon, cut into slices
  • 2 tablespoons sour cream
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste

 

INSTRUCTIONS:

  1. Preheat the Air fryer to 365°F and grease a pizza pan with the olive oil.
  2. In a large bowl, mix together the grated potatoes, minced shallots, chopped chives, cheddar cheese, salt, and black pepper until well combined.
  3. Transfer the potato mixture into the prepared pizza pan and evenly spread it out to form a round shape. Press the mixture down gently.
  4. Place the pizza pan in the Air fryer basket.
  5. Cook the potato rosti at 365°F for about 15 minutes or until the edges are golden brown and crispy.
  6. Once cooked, carefully remove the pizza pan from the Air fryer and transfer the potato rosti to a serving platter.
  7. Cut the potato rosti into wedges or slices.
  8. Arrange the smoked salmon slices on top of the potato rosti.
  9. Dollop spoonfuls of sour cream over the smoked salmon.
  10. Garnish with additional chopped chives if desired.
  11. Serve the potato rosti with smoked salmon and sour cream immediately.
