INGREDIENTS

  • 3 tablespoonfuls Crisco (vegetable shortening)
  • 1 egg
  • 3 small eggplants
  • 1/2 cupful breadcrumbs
  • 1-1/2 cupfuls stock
  • 1/2 cupful chopped cooked chicken or veal
  • Salt, pepper, and nutmeg to taste
  • 1/2 cupful white wine
  • Criscoed crumbs (breadcrumbs mixed with Crisco)
  • 1 tablespoonful flour
  • 1 tablespoonful sherry

 

INSTRUCTIONS

  1. Start by cutting the eggplants in halves and gently scooping out the insides, ensuring to leave a shell about half an inch thick. This hollowed-out eggplant shell will serve as the vessel for the flavorful stuffing.
  2. Soak 1/2 cupful of breadcrumbs in 1/2 cupful of stock for ten minutes, allowing the breadcrumbs to absorb the liquid and soften. After soaking, add the chopped cooked chicken or veal, 2 tablespoonfuls of melted Crisco, a well-beaten egg, and a careful seasoning of salt, pepper, and nutmeg. This mixture forms the delicious and aromatic stuffing, known as forcemeat.
  3. Divide the prepared forcemeat equally among the hollowed eggplant shells, gently packing it in to ensure a harmonious blend of flavors.
  4. Sprinkle a generous layer of Criscoed crumbs over the top of each stuffed eggplant, adding a delightful crunch and richness to the dish.
  5. Place the stuffed eggplants in a greased baking pan and pour in the remaining stock and white wine, creating a flavorful bath that will infuse the eggplants with moisture and depth of taste.
  6. Bake the stuffed eggplants in a moderate oven for approximately half an hour. The cooking process will meld the flavors, soften the eggplant shells, and create a tantalizing aroma that fills your kitchen.
  7. As the stuffed eggplants bake, prepare the accompanying sauce. In a saucepan, combine 1 tablespoonful of Crisco and 1 tablespoonful of flour, blending them over medium heat. Add the sherry and 1 cupful of the cooking liquor from the pan in which the eggplants were baked. Cook the sauce for about five minutes, allowing it to thicken and develop its rich flavors.
  8. Once the stuffed eggplants are cooked to perfection, remove them from the oven and carefully arrange them on a hot serving dish. The contrast between the golden-brown Criscoed crumbs and the tender eggplant shells will be visually enticing.
  9. Drizzle the prepared sauce over the stuffed eggplants, creating a luscious and aromatic finish that ties the dish together.
