INGREDIENTS

  • 2 tablespoonfuls melted Crisco (shortening)
  • 6 large potatoes
  • 2 tablespoonfuls grated cheese
  • 1 yolk of egg
  • Salt and pepper to taste

 

INSTRUCTIONS

  1. Preheat your oven to a moderate temperature.
  2. Begin by washing six well-shaped white potatoes to remove any dirt or debris.
  3. Rub the skin of each potato with melted Crisco, which will help create a crispy and flavorful outer layer when baked.
  4. Place the Crisco-rubbed potatoes in the preheated oven and bake them until they become tender. This usually takes about 45-60 minutes, depending on the size of the potatoes.
  5. Once the potatoes are tender, remove them from the oven and allow them to cool slightly.
  6. Cut a small slice off one end of each potato. With a teaspoon, carefully remove all the potato from the shells, creating a hollowed-out cavity while leaving a potato shell.
  7. In a mixing bowl, mash the potato that was removed from the shells. Add melted Crisco, grated cheese, salt, pepper, and the yolk of an egg to the mashed potato. These ingredients will create a flavorful and creamy stuffing mixture.
  8. Thoroughly mix all the ingredients in the bowl until well combined.
  9. Gently refill each potato shell with the prepared stuffing mixture, packing it in and creating a mound on top.
  10. Place the stuffed potatoes back in the oven and bake them for an additional fifteen minutes. This step allows the stuffing to set and the flavors to meld.
  11. Once the stuffed potatoes are cooked through and the top is slightly golden, remove them from the oven.
  12. To serve, place the hot stuffed potatoes on a napkin or serving dish, presenting them as a visually appealing and inviting dish.
