INGREDIENTS

  • 2 tablespoonfuls Crisco (shortening)
  • 6 beets
  • 2 green peppers
  • 2 tablespoonfuls breadcrumbs
  • 1/2 teaspoonful onion juice
  • Salt and pepper to taste
  • Watercress (for garnish)

 

INSTRUCTIONS

  1. Preheat your oven to a moderate temperature.
  2. Begin by selecting 6 smooth and even-sized beets. Wash them thoroughly to remove any dirt or debris.
  3. Place the washed beets in a pot of boiling salted water and cook until they become tender. The cooking time will vary depending on the size of the beets but is typically around 30-40 minutes.
  4. Once the beets are tender, remove them from the water and allow them to cool slightly.
  5. Peel the cooked beets, and then carefully remove the root end and scoop out the center, leaving a shell about half an inch thick. This will create a cavity for the stuffing.
  6. In a separate bowl, dice the green peppers after removing their stems and seeds. You can do this by covering the diced peppers with boiling water for about ten minutes, which helps soften them slightly.
  7. Combine the diced green peppers with the scooped-out beet centers in the bowl.
  8. Add the Crisco, breadcrumbs, onion juice, salt, and pepper to the pepper and beet mixture. Mix all the ingredients well to create a cohesive stuffing.
  9. Divide the stuffing mixture evenly among the beet shells, filling each beet’s cavity with the flavorful mixture.
  10. Dot the top of each stuffed beet with additional Crisco to add a rich and buttery flavor.
  11. Place the stuffed beets in a baking dish and bake them in the preheated oven for about twenty minutes. This baking time allows the flavors to meld and the stuffing to become slightly crispy.
  12. Once the stuffed beets are cooked through and have a slightly golden hue, remove them from the oven.
  13. To serve, garnish the stuffed beets with fresh watercress, adding a burst of color and a peppery note to the dish.
