However, the incomparable taste of homemade pretzels makes it worth the effort to make them from scratch. History: The origin of pretzels can be traced back to European monasteries in the Middle Ages. Monks used leftover bread dough to create twisted shapes resembling arms crossed in prayer. These early pretzels were often given to children who had memorized their prayers. The tradition of pretzel-making spread across Europe, and the pretzel became associated with good luck, fertility, and spiritual significance. German immigrants later introduced pretzels to America, where they gained popularity and evolved into the beloved snack we know today.

INGREDIENTS 

  • 2 packages (¼ ounce each) active dry yeast
  • 2 cups warm water (110° to 115°)
  • ½ cup sugar
  • ¼ cup butter, softened
  • 2 teaspoons salt
  • 1 egg
  • 6½ to 7½ cups all-purpose flour
  • 1 egg yolk
  • 2 tablespoons cold water
  • Coarse salt (for sprinkling)

 

INSTRUCTIONS 

  1. Activate the yeast: In a large bowl, dissolve the yeast in warm water. Add the sugar, softened butter, salt, egg, and 2 cups of flour. Beat the mixture until it becomes smooth. Gradually stir in enough of the remaining flour to form a stiff dough. Once the dough is ready, transfer it to a greased bowl, turning it once to ensure the top is also greased. Cover the bowl and refrigerate the dough for 2-24 hours. This refrigeration process enhances the flavor and texture of the pretzels.
  2. Shape the pretzels: After the dough has chilled, punch it down and turn it out onto a lightly floured surface. Divide the dough in half and cut each half into 16 pieces. Roll each piece into a 20-inch rope. Shape each rope into a pretzel by crossing the ends over each other and pressing them onto the curved portion of the dough.
  3. Prepare for baking: Place the shaped pretzels onto greased baking sheets. In a separate bowl, beat the egg yolk and cold water together. Brush this mixture over the pretzels, ensuring they are evenly coated. Sprinkle coarse salt over the pretzels to add flavor and texture.
  4. Let them rise and bake: Cover the baking sheets and let the pretzels rise in a warm place until they have doubled in size. This typically takes about 25 minutes. Once the pretzels have risen, preheat the oven to 400°F (200°C). Bake the pretzels for 15-20 minutes or until they turn golden brown.
  5. Cool and enjoy: Once baked, remove the pretzels from the baking sheets and transfer them to wire racks to cool. Allow them to cool for a few minutes before serving. Soft pretzels are best enjoyed when they are still warm and fresh.
