INGREDIENTS

  • 1 cupful Crisco
  • 5 eggs
  • 1 cupful sugar
  • 1 teaspoonful salt
  • 1/2 lb. cornstarch
  • 1 teaspoonful lemon extract

 

INSTRUCTIONS

Creaming and Preparing the Batter:

  1. Creaming Crisco and Sugar: Cream the Crisco and salt together until the mixture is smooth and light.
  2. Incorporating Sugar: Gradually add sugar to the creamed Crisco while continuously beating the mixture. This step ensures a well-incorporated and airy batter.
  3. Adding Eggs: Add the egg yolks one by one, beating well after each addition. Incorporating eggs gradually helps achieve a homogenous mixture.
  4. Incorporating Cornstarch: Add cornstarch to the batter, adding it by tablespoonfuls. Continue to mix until the cornstarch is fully integrated into the mixture.
  5. Adding Flavor: Incorporate the lemon extract into the batter, infusing it with a bright and zesty flavor.
  6. Beating Egg Whites: In a separate bowl, beat the egg whites until they reach a stiff froth.
  7. Folding Egg Whites: Gently fold the beaten egg whites into the batter. This step contributes to the cake’s light and airy texture.

 

Baking the Cake:

  1. Preparing the Pan: Line a cake tin with parchment paper, ensuring that it’s well-fitted to the shape of the tin.
  2. Pouring the Batter: Carefully pour the cake batter into the prepared cake tin.
  3. Baking: Bake the Sand Cake in a moderate oven for approximately three-quarters of an hour. The cake should be golden brown, and a toothpick inserted into the center should come out clean.
