The history of Crisco Sponge Cake is intertwined with the evolution of baking practices, where the quest for a perfect sponge cake led to innovative ingredient choices. Crisco, a brand of vegetable shortening, revolutionized baking in the early 20th century by offering an alternative to traditional animal fats. The use of Crisco in baking introduced a lighter texture and a neutral flavor, allowing other ingredients to shine.

Sponge cakes, characterized by their airy and spongy crumb, had long been a coveted delicacy. The emergence of Crisco Sponge Cake was a marriage of tradition and innovation, showcasing how new ingredients could be integrated into cherished recipes.

As time went on, Crisco Sponge Cake became a staple in many households, offering a reliable and versatile base for a variety of flavors and presentations. The cake’s airy texture and subtly sweet taste made it a perfect canvas for creative toppings, fillings, and frostings.

INGREDIENTS

  • 3 eggs
  • 1 cupful sugar
  • 1/2 cupful Crisco (shortening)
  • 1/2 teaspoonful salt
  • 1-1/4 cupfuls flour
  • 2 teaspoonfuls baking powder
  • 1/2 teaspoonful orange extract
  • 1/2 cupful cold water

INSTRUCTIONS

Preparing the Batter:

  1. Creaming Crisco: Cream the Crisco until smooth and creamy.
  2. Incorporating Egg Yolks: Add the salt, egg yolks (well beaten), and sugar to the creamed Crisco. Beat the mixture for approximately five minutes to ensure a light and fluffy consistency.
  3. Adding Flavor and Water: Incorporate the orange extract and cold water to the mixture. These ingredients lend a refreshing citrus note and moisture to the cake.
  4. Sifting Dry Ingredients: In a separate bowl, sift the flour and baking powder together.
  5. Alternating Additions: Gradually add the sifted dry ingredients and the beaten egg whites to the Crisco mixture. Alternate between the dry ingredients and the egg whites, gently folding them in to maintain the cake’s lightness.

Baking the Cake:

  1. Prepping the Pans: Grease and flour gem pans with Crisco to prevent sticking.
  2. Dividing the Batter: Divide the cake batter into the prepared gem pans.
  3. Baking: Bake the cakes in a moderate oven for approximately fifteen minutes. The cakes should rise, turn golden brown, and become firm to the touch.
