Roasted Cauliflower with Raisins and Capers

Roasted Cauliflower with Capers and Raisins is a delicious and vibrant dish that combines the natural sweetness of roasted cauliflower with the tanginess of capers and the subtle sweetness of golden raisins. This recipe takes ordinary cauliflower florets and transforms them into a flavorful and colorful side dish that will impress your taste buds.

Roasting lightly crisps and caramelizes the cauliflower, which gets a boost of sweetness from raisins and balsamic vinegar and a salty tang from capers. Serve this as a side dish with fish fillets or as part of an antipasti or vegetable buffet.

Serves 6

 

INGREDIENTS

  • 1 medium head cauliflower (about 1½ pounds), trimmed and cut into small florets
  • 1 medium red onion, cut into 8 wedges
  • ¼ cup extra-virgin olive oil
  • Salt and freshly ground pepper
  • ¼ cup golden raisins
  • 2 tablespoons capers, rinsed and drained
  • 2 tablespoons balsamic vinegar

 

INSTRUCTIONS

  1. Preheat the oven to 425°F.
  2. In a large roasting pan, toss together the cauliflower, onion, oil, and salt and pepper to taste.
  3. Roast the vegetables, turning them at least twice, for 20 to 30 minutes until they are nicely browned.
  4. While the cauliflower is roasting, soak the raisins in warm water to cover until plumped. Drain.
  5. Add the plumped raisins and capers to the roasted cauliflower and cook for an additional 5 minutes.
  6. Drizzle the balsamic vinegar over the cauliflower mixture and toss to coat.
  7. Serve the dish hot or at room temperature.
