Balsamic vinegar is a great ingredient for enhancing the flavor of many vegetables. Here it works its magic on eggplants, creating a slightly sweet glaze.

Glazed Roasted Eggplant is a delightful dish that combines the natural sweetness of eggplant with a tangy glaze. The eggplant is roasted to perfection, resulting in a tender and flavorful dish that can be enjoyed as a side or even a main course. INGREDIENTS

  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • ½ teaspoon salt
  • Freshly ground pepper
  • 8 miniature eggplants (about 1½ pounds), such as Japanese or Fairytale, trimmed and cut lengthwise in half

 

INSTRUCTIONS

  1. Preheat the oven to 400°F.
  2. In a 13- ×-9- ×-2-inch baking dish, whisk together the oil, vinegar, salt, and pepper to taste.
  3. Add the eggplant halves to the dish and turn them to coat, ensuring they are evenly coated with the mixture.
  4. Arrange the eggplants cut side down in the dish in a single layer.
  5. Bake for 25 to 30 minutes, or until the cut sides are browned and the eggplants are tender.
  6. Check the pan after 20 minutes to ensure that the dressing has not completely dried up. If it has, add a spoonful of water to the dish.
  7. Serve the roasted eggplants warm.
