Roast Chicken with Rosemary

Serves :6-8

 

INGREDIENTS:

  • 1 (3 pound) whole chicken, rinsed, skinned
  • Salt and pepper to taste
  • 1 onion, quartered
  • 1/4 cup chopped rosemary

 

INSTRUCTIONS:

  1. Heat the oven to 350F (175C).
  2. Sprinkle salt and pepper on the chicken, both inside and outside.
  3. Stuff the chicken with the quartered onion and chopped rosemary.
  4. Place the chicken in a baking dish.
  5. Bake the chicken in the preheated oven until it is cooked through. The cooking time will vary depending on the size of the bird. Ensure the internal temperature reaches a safe level (165F or 74C) to confirm the chicken is fully cooked.
  6. Once cooked, remove the chicken from the oven and let it rest for a few minutes before serving.

Here are some variations of the recipe:

1: Lemon Herb Roasted Chicken

  • Replace the chopped rosemary with 1/4 cup of chopped fresh herbs like thyme, parsley, and sage.
  • Add the zest and juice of one lemon to the chicken before baking.
  • Drizzle a mixture of olive oil and melted butter over the chicken before roasting to keep it moist and flavorful.

 2: Spicy Paprika Roasted Chicken

  • Replace the chopped rosemary with 1 tablespoon of smoked paprika and 1 teaspoon of chili powder for a smoky and spicy flavor.
  • Rub the chicken with a mixture of olive oil, garlic powder, cayenne pepper, and paprika before baking.

 3: Garlic Parmesan Roasted Chicken

  • Mix 1/4 cup of grated Parmesan cheese with 2 tablespoons of melted butter and 2 cloves of minced garlic.
  • Spread the mixture evenly over the chicken before baking to create a delicious garlic Parmesan crust.

4: Mediterranean Roasted Chicken

  • Replace the chopped rosemary with 1 teaspoon each of dried oregano, thyme, and basil.
  • Stuff the chicken with lemon slices, olives, and a few garlic cloves for a Mediterranean twist.

 5: Asian-inspired Roasted Chicken

  • Replace the chopped rosemary with 1 tablespoon of grated ginger and 2 tablespoons of soy sauce.
  • Add sliced scallions and a dash of sesame oil to enhance the Asian flavors.

6: Honey Mustard Roasted Chicken

  • Mix 2 tablespoons of Dijon mustard with 1 tablespoon of honey and 1 tablespoon of olive oil.
  • Brush the mixture over the chicken before roasting to create a sweet and tangy glaze.

 7: Herb Butter Roasted Chicken

  • Prepare a herb butter by mixing 2 tablespoons of softened butter with 1 tablespoon of chopped fresh herbs like thyme, rosemary, and parsley.
  • Carefully lift the skin of the chicken and spread the herb butter under the skin, covering the breast and thighs.
  • Sprinkle the chicken with salt and pepper, and roast it in the oven as per the original instructions.

8: Maple Glazed Roasted Chicken

  • Create a glaze by mixing 1/4 cup of maple syrup, 2 tablespoons of Dijon mustard, and 1 tablespoon of apple cider vinegar.
  • Brush the maple glaze over the chicken during the last 15-20 minutes of roasting to create a sweet and tangy finish.

 9: Garlic Lemon Roasted Chicken

  • In addition to the onion and rosemary, stuff the chicken cavity with 4-5 garlic cloves and half a lemon.
  • Drizzle the chicken with olive oil, and sprinkle it with salt, pepper, and additional lemon zest before roasting.
