INGREDIENTS:

  • 10 boneless skinless chicken breasts
  • 3/4 cup low-fat yogurt
  • 1/2 cup chopped basil
  • 2 tsp. arrowroot flour
  • 1 cup oatmeal, coarsely ground
  • Salt and pepper to taste

 

INSTRUCTIONS:

  1. Arrange the chicken breasts in a baking dish.
  2. In a bowl, combine the chopped basil, low-fat yogurt, and arrowroot flour. Mix well until the ingredients are fully incorporated.
  3. Spread the yogurt mixture evenly over the chicken breasts, covering them completely.
  4. In a separate bowl, combine the coarsely ground oatmeal with salt and pepper to taste.
  5. Sprinkle the oatmeal mixture over the chicken, coating each breast with a layer of oatmeal.
  6. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
  7. Place the baking dish with the chicken in the preheated oven.
  8. Bake the chicken for approximately 30 minutes or until the chicken is fully cooked and the oatmeal topping is golden brown and crispy.
  9. Once the chicken is cooked, remove the baking dish from the oven.
  10. Serve the baked chicken breasts with your favorite side dishes or salads.

  2. Asian-Inspired Chicken: For an Asian twist, marinate the chicken in a mixture of soy sauce, minced ginger, garlic, and a splash of sesame oil. Coat the chicken with panko breadcrumbs mixed with sesame seeds before baking. Serve with a side of steamed broccoli and a drizzle of teriyaki sauce.
  3. Cheesy Spinach-Stuffed Chicken: Cut a slit in the side of each chicken breast to create a pocket. Stuff the pocket with a mixture of cooked spinach, ricotta cheese, and shredded mozzarella.
