I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Serves :4-6

INGREDIENTS:

  • Garlic, minced
  • Jalapeno pepper, minced
  • Fresh cilantro, chopped
  • Salt
  • Black pepper
  • Olive oil
  • Lime juice
  • Orange juice
  • Flank steak

INSTRUCTIONS:

  1. MARINADE:
    • In a container, mix together the minced garlic, minced jalapeno pepper, chopped cilantro, salt, and black pepper to create a paste.
    • Add the olive oil, lime juice, and orange juice to the paste.
    • Shake the container to combine all the ingredients, creating the marinade.
    • This marinade can be used for beef or served as a flavorful table condiment.
  2. MARINATING THE STEAK:
    • Place the flank steak in a baking dish and pour the prepared marinade over it.
    • Ensure the steak is fully coated with the marinade.
    • Cover the baking dish and refrigerate for up to 8 hours, allowing the flavors to infuse the steak.
  3. COOKING THE STEAK:
    • Remove the steak from the marinade and let any excess marinade drip off.
    • Season the steak on both sides with additional salt and black pepper to taste.
    • Preheat your grill or broiler to medium-high heat.
    • Grill or broil the steak for approximately 7 to 10 minutes per side, depending on your preferred level of doneness (medium-rare is recommended).
    • Turn the steak only once during cooking to develop a nice sear on both sides.
  4. RESTING AND SLICING:
    • Once cooked, transfer the steak to a cutting board and allow it to rest for about 5 minutes.
    • During this resting period, the juices will redistribute, ensuring a tender and flavorful result.
    • After resting, thinly slice the steak across the grain to maximize tenderness.
  5. SERVING:
    • Serve the deliciously marinated and cooked flank steak with your favorite side dishes or use it as a filling for tacos, salads, or sandwiches. Enjoy!

Here are some variations of the recipe:

Main Ingredients:

  • Flank Steak: The star of the dish, this cut of beef is known for its robust flavor and tends to be lean and tender when prepared correctly.
  • Marinade: The marinade consists of various ingredients that infuse the steak with taste and tenderness. In the original recipe, the marinade includes garlic, jalapeno, cilantro, salt, pepper, oil, lime juice, and orange juice.

Instructions:

  1. Marinating: The process starts with preparing the marinade by combining all the ingredients. The flank steak is then placed in a baking dish, and the marinade is poured over it, ensuring that the meat is well coated. The marinating time is crucial, allowing the flavors to penetrate the steak and tenderize it. The original recipe suggests marinating for up to 8 hours, allowing the meat to absorb the delicious citrus and herb flavors fully.
  2. Cooking: After marinating, the flank steak can be grilled or broiled. Cooking time will vary depending on the thickness of the meat and desired doneness. In the original recipe, the steak is grilled or broiled for approximately 7 to 10 minutes per side until it reaches a medium-rare doneness. Once cooked, the meat is removed from the heat and allowed to rest for a few minutes, allowing the juices to redistribute, resulting in a juicy and flavorful steak.

Variations: The recipe offers a versatile marinade that can be adapted to create different flavor profiles. For example, you can try variations like:

  • Citrus Herb Marinade: Incorporate additional fresh herbs like thyme, oregano, and parsley, along with lemon and orange zest, for a refreshing and aromatic twist.
  • Asian Ginger Soy Marinade: Infuse the steak with the flavors of ginger, garlic, soy sauce, and sesame oil, resulting in a savory and umami-rich profile.
  • Spicy Chipotle Lime Marinade: For those who enjoy a kick of heat, the addition of chipotle peppers in adobo sauce and lime juice creates a smoky and tangy marinade with a spicy punch.

Serving Suggestions: The marinated flank steak can be served in various ways. It pairs beautifully with fresh salads, roasted vegetables, or steamed rice. Slicing the cooked flank steak thinly against the grain helps retain its tenderness and makes it perfect for serving over salads or as a protein-packed filling for tacos or sandwiches.
