INGREDIENTS:
- 1 pound red peppers
- 1 cup farmers’ cheese
- 1/4 cup virgin olive oil or avocado oil
- 1 tbsp minced garlic
- Lemon juice, salt, basil, oregano, red pepper flakes to taste.
INSTRUCTIONS:
- Roast the red peppers by placing them on a baking sheet and roasting in the oven at 425 degrees F (220 degrees C) for about 25-30 minutes until the skin is charred and blistered. Alternatively, you can roast them over an open flame on a gas stove or grill.
- Once roasted, transfer the peppers to a bowl and cover with plastic wrap. Allow them to cool for about 15 minutes. This will make it easier to peel off the skin.
- Peel the roasted peppers, remove the seeds and stems, and chop them into smaller pieces.
- In a food processor, combine the chopped roasted peppers and minced garlic. Process until smooth.
- Add the farmers’ cheese to the food processor and process again until the mixture is well combined and smooth.
- With the food processor running, slowly drizzle in the olive oil or avocado oil until the mixture reaches your desired consistency.
- Add lemon juice, salt, basil, oregano, and red pepper flakes to taste. Adjust the seasoning according to your preference.
- Process the mixture again until all the ingredients are well incorporated and the dip is smooth and creamy.
- Transfer the dip to a serving bowl and refrigerate it for at least 30 minutes to allow the flavors to meld together.
- Serve the roasted red pepper and farmers’ cheese dip with your favorite crackers, bread, or vegetables for a delicious and flavorful appetizer or snack. Enjoy!
