Red Pepper Dip

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

INGREDIENTS:

  • 1 pound red peppers
  • 1 cup farmers’ cheese
  • 1/4 cup virgin olive oil or avocado oil
  • 1 tbsp minced garlic
  • Lemon juice, salt, basil, oregano, red pepper flakes to taste.

 

INSTRUCTIONS:

  1. Roast the red peppers by placing them on a baking sheet and roasting in the oven at 425 degrees F (220 degrees C) for about 25-30 minutes until the skin is charred and blistered. Alternatively, you can roast them over an open flame on a gas stove or grill.
  2. Once roasted, transfer the peppers to a bowl and cover with plastic wrap. Allow them to cool for about 15 minutes. This will make it easier to peel off the skin.
  3. Peel the roasted peppers, remove the seeds and stems, and chop them into smaller pieces.
  4. In a food processor, combine the chopped roasted peppers and minced garlic. Process until smooth.
  5. Add the farmers’ cheese to the food processor and process again until the mixture is well combined and smooth.
  6. With the food processor running, slowly drizzle in the olive oil or avocado oil until the mixture reaches your desired consistency.
  7. Add lemon juice, salt, basil, oregano, and red pepper flakes to taste. Adjust the seasoning according to your preference.
  8. Process the mixture again until all the ingredients are well incorporated and the dip is smooth and creamy.
  9. Transfer the dip to a serving bowl and refrigerate it for at least 30 minutes to allow the flavors to meld together.
  10. Serve the roasted red pepper and farmers’ cheese dip with your favorite crackers, bread, or vegetables for a delicious and flavorful appetizer or snack. Enjoy!
