INGREDIENTS:

  • 1-2 whole garlic heads
  • Olive oil

 

INSTRUCTIONS:

  1. Heat the Oven: Preheat the oven to 350°F (175°C).
  2. Prepare the Garlic: Slice off the top of each garlic head to expose the individual cloves. Make sure not to remove too much of the cloves, as you want them to stay intact.
  3. Olive Oil Rub: Rub olive oil over the exposed tops of the garlic heads, ensuring they are well-coated.
  4. Baking: Place the garlic heads cut side down on a foil-lined baking sheet.
  5. Roast the Garlic: Bake the garlic heads in the preheated oven until the cloves turn golden and soft. The roasting time can vary, but it usually takes around 30-40 minutes.
  6. Cooling: Remove the baking sheet from the oven and allow the roasted garlic heads to cool for a few minutes.
  7. Squeeze and Mash: Once cooled, gently squeeze each head of garlic to expel the soft roasted cloves into a bowl.
  8. Mash the Garlic: Using a fork or the back of a spoon, mash the roasted garlic cloves into a paste. The garlic should be soft and spreadable.

VARIATIONS OF ROASTED GARLIC PASTE:

  1. Herb-infused Roasted Garlic Paste: Before roasting the garlic, add some fresh herbs like rosemary, thyme, or sage to the olive oil rub. The herbs will infuse their flavors into the garlic as it roasts, giving the paste an extra dimension of taste.
  2. Spicy Roasted Garlic Paste: For a kick of heat, sprinkle some red pepper flakes or chili powder over the garlic heads before roasting. The resulting paste will have a delightful spiciness, perfect for adding a zing to your dishes.

  5. Roasted Garlic and Roasted Red Pepper Paste: Mix roasted garlic paste with roasted red pepper paste for a vibrant and flavorful combination. You can either roast the red peppers yourself or use store-bought roasted red peppers.
  6. Roasted Garlic and Sun-Dried Tomato Paste: Blend roasted garlic paste with rehydrated sun-dried tomatoes for a rich and savory spread. This variation is excellent as a condiment or mixed into pasta dishes.
  7. Roasted Garlic and Herb Butter: Incorporate the roasted garlic paste into softened butter and mix in your favorite herbs like parsley, chives, or basil. This compound butter can be used to elevate the flavor of steaks, bread, or vegetables.
  8. Roasted Garlic and Hummus Blend: Add roasted garlic paste to your favorite hummus recipe to give it a deeper and more robust taste. The combination of roasted garlic and chickpeas creates a wonderful harmony of flavors.
  9. Roasted Garlic Aioli: Mix roasted garlic paste with mayonnaise or Greek yogurt to create a creamy and garlicky aioli. This condiment pairs perfectly with sandwiches, burgers, and as a dipping sauce.
  10. Roasted Garlic and White Bean Dip: Blend roasted garlic paste with white beans, lemon juice, and a touch of olive oil to create a delicious and protein-rich dip. Serve it with pita chips or fresh vegetables.
