The history of funfetti cupcakes can be traced back to the mid-20th century when Pillsbury introduced the concept of “funfetti” in their boxed cake mix. The term “funfetti” is a combination of “fun” and “confetti,” referring to the colorful sprinkles that are mixed into the cake batter to create a celebratory appearance.

The idea of adding sprinkles to cakes and cupcakes is not entirely new, as bakers have been using various types of decorative elements to enhance the appearance of desserts for centuries. However, Pillsbury’s funfetti cake mix brought this concept to mainstream popularity in the 1950s, and it quickly became a hit among home bakers and party planners.

INGREDIENTS

  • 2 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 and 1/2 cups granulated sugar
  • 2 eggs
  • 1 and 1/2 teaspoons vanilla extract
  • 1 and 1/4 cups milk
  • 1/2 cup red, white, and pink sprinkles

 

INSTRUCTIONS

  1. Preheat the oven to 350°F (175°C). Line a muffin pan with paper cupcake liners, preferably Valentine’s Day themed ones for an extra festive touch.
  2. In a bowl, mix together the all-purpose flour, baking powder, and salt. Set this dry mixture aside.
  3. In a separate bowl, mix the melted butter and granulated sugar until the mixture becomes light and fluffy.
  4. Add the eggs and vanilla extract to the butter and sugar mixture, and beat well until fully incorporated. Whisk in the milk.
  5. Slowly add the flour mixture to the wet mix, whisking just until combined. Be careful not to overmix the batter.
  6. Add the red, white, and pink sprinkles into the batter, gently folding them in until they are scattered throughout.
  7. Pour the batter into the lined cupcake pan, filling each cup about 3/4 of the way.
  8. Bake the cupcakes for 15 to 20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
  9. Allow the cupcakes to cool before frosting or serving.
