INGREDIENTS:
- 1 Precooked and cooled Savory Superfoods Pie Crust
- 8 ounces organic spinach, cooked and drained
- 6 ounces cubed pork
- 2 medium shallots, thinly sliced and sautéed
- 4 large eggs
- 1 cup coconut milk
- 3/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
INSTRUCTIONS:
- In a skillet, brown the cubed pork in coconut oil over medium heat. Once cooked, add the cooked and drained spinach and sautéed shallots to the skillet. Mix well and set aside.
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the eggs, coconut milk, salt, and freshly ground black pepper until the mixture becomes foamy.
- Add about 3/4 of the drained filling mixture (pork, spinach, and shallots) to the egg mixture, reserving the other 1/4 to use as a topping for the quiche.
- Pour the egg mixture with the filling into the precooked pie crust, ensuring it is evenly distributed.
- Place the remaining filling on top of the quiche.
- Carefully transfer the quiche to the center of the middle oven rack.
- Bake the quiche undisturbed for 45 to 50 minutes or until the center is set and the top is lightly golden.
- Remove the quiche from the oven and let it cool slightly before serving.
