Serves : 2-3

 

INGREDIENTS:

  • 1 Precooked and cooled Savory Superfoods Pie Crust
  • 8 ounces organic spinach, cooked and drained
  • 6 ounces cubed pork
  • 2 medium shallots, thinly sliced and sautéed
  • 4 large eggs
  • 1 cup coconut milk
  • 3/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper

 

INSTRUCTIONS:

  1. In a skillet, brown the cubed pork in coconut oil over medium heat. Once cooked, add the cooked and drained spinach and sautéed shallots to the skillet. Mix well and set aside.
  2. Preheat your oven to 350°F (175°C).
  3. In a large bowl, whisk together the eggs, coconut milk, salt, and freshly ground black pepper until the mixture becomes foamy.
  4. Add about 3/4 of the drained filling mixture (pork, spinach, and shallots) to the egg mixture, reserving the other 1/4 to use as a topping for the quiche.
  5. Pour the egg mixture with the filling into the precooked pie crust, ensuring it is evenly distributed.
  6. Place the remaining filling on top of the quiche.
  7. Carefully transfer the quiche to the center of the middle oven rack.
  8. Bake the quiche undisturbed for 45 to 50 minutes or until the center is set and the top is lightly golden.
  9. Remove the quiche from the oven and let it cool slightly before serving.

VARIATIONS:

  1. Vegetarian Quiche: Omit the pork and use additional vegetables like mushrooms, bell peppers, or roasted sweet potatoes to create a flavorful vegetarian quiche.
  2. Chicken and Broccoli Quiche: Replace the pork with cooked and diced chicken breast and add steamed broccoli florets for a tasty chicken and broccoli quiche.
  3. Ham and Cheese Quiche: Substitute the pork with diced ham and add your favorite shredded cheese, such as cheddar or Swiss, to make a classic ham and cheese quiche.
  4. Mediterranean Quiche: Use cooked and seasoned ground lamb or beef, along with spinach, feta cheese, and black olives for a Mediterranean-inspired quiche.
  5. Mexican Quiche: Incorporate cooked ground beef or chorizo, black beans, diced tomatoes, and shredded cheddar cheese to create a zesty Mexican quiche. Top it with avocado slices and a dollop of sour cream.
  6. Smoked Salmon and Dill Quiche: Swap the pork with smoked salmon and add fresh dill to the egg mixture for a delectable seafood quiche.
  7. Spicy Sausage Quiche: Use spicy sausage instead of pork for a kick of heat. Add diced bell peppers and onions for extra flavor and color.
  8. Quiche Lorraine: Stick to the original recipe but add cooked bacon and Swiss cheese for a classic Quiche Lorraine.
  9. Greek Quiche: Mix cooked ground lamb with Kalamata olives, sun-dried tomatoes, and crumbled feta cheese to make a Greek-inspired quiche.
  10. Southwest Quiche: Incorporate cooked and seasoned ground turkey, black beans, corn, and diced green chilies to create a flavorful Southwest-style quiche.
  11. Spinach and Feta Quiche: Use sautéed spinach and crumbled feta cheese for a delicious and savory combination.
  12. Bacon and Mushroom Quiche: Replace the pork with cooked and crumbled bacon and add sautéed mushrooms for a rich and hearty quiche.
  13. Broccoli and Cheddar Quiche: Use steamed broccoli florets and shredded cheddar cheese for a classic and satisfying quiche.
  14. Tomato and Basil Quiche: Layer sliced tomatoes and fresh basil leaves in the pie crust before pouring in the egg mixture for a light and flavorful quiche.
  15. Roasted Vegetable Quiche: Roast a mix of your favorite vegetables, such as bell peppers, zucchini, and eggplant, and add them to the egg mixture for a colorful and wholesome quiche.
