INGREDIENTS 

FOR THE MARINADE:

  • 1 pound pork tenderloin, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch

 

FOR THE STIR FRY:

  • 8 oz rice noodles or your preferred noodles
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 bunch bok choy, chopped (separate white stalks and green leaves)
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 2 green onions, sliced
  • Sesame seeds for garnish (optional)

 

INSTRUCTIONS 

  1. In a bowl, whisk together the soy sauce, hoisin sauce, oyster sauce, sesame oil, and cornstarch to create the marinade.
  2. Place the sliced pork tenderloin in the marinade, ensuring each slice is coated. Let it marinate for at least 15-20 minutes.
  3. Cook the rice noodles according to the package instructions. Drain and set aside.
  4. Heat a wok or large skillet over high heat. Add 1 tablespoon of vegetable oil and swirl to coat the surface.
  5. Add the marinated pork slices to the hot wok and stir-fry for 2-3 minutes until they are cooked through and slightly caramelized. Remove the pork from the wok and set aside.
  6. In the same wok, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger and stir-fry for about 30 seconds until fragrant.
  7. Add the white bok choy stalks, red bell pepper, and julienned carrot to the wok. Stir-fry for 2-3 minutes until the vegetables begin to soften.
  8. Add the bok choy green leaves to the wok and stir-fry for an additional 1-2 minutes until they are wilted.
  9. Return the cooked pork slices to the wok and add the cooked rice noodles. Toss everything together to combine.
  10. Add the sliced green onions and toss once more to distribute the flavors.
  11. Remove the wok from the heat and divide the stir-fry among serving plates.
  12. If desired, garnish with sesame seeds for an extra crunch and nutty flavor.
