INGREDIENTS 

FOR THE CHICKEN MARINADE:

  • 1 pound boneless, skinless chicken breasts or thighs, sliced into thin strips
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

 

FOR THE FAJITAS:

  • 2 bell peppers (a mix of colors), sliced
  • 1 onion, thinly sliced
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Flour or corn tortillas
  • Optional toppings: shredded cheese, sour cream, guacamole, salsa, chopped cilantro, lime wedges

 

INSTRUCTIONS

  1. In a bowl, whisk together the olive oil, lime juice, minced garlic, chili powder, cumin, smoked paprika, salt, and pepper to create the chicken marinade.
  2. Add the sliced chicken to the marinade, ensuring each strip is coated. Let the chicken marinate for at least 30 minutes to allow the flavors to infuse.
  3. In a large skillet, heat the vegetable oil over medium-high heat. Add the sliced bell peppers and onions.
  4. Sauté the peppers and onions for about 5-7 minutes until they are softened and slightly charred. Season with salt and pepper to taste. Remove the vegetables from the skillet and set aside.
  5. In the same skillet, add the marinated chicken strips. Cook the chicken for about 5-7 minutes, stirring occasionally, until they are cooked through and slightly browned.
  6. Return the sautéed bell peppers and onions to the skillet with the cooked chicken. Toss everything together to combine the flavors.
  7. Warm the tortillas according to the package instructions. You can do this by heating them on a dry skillet or wrapping them in aluminum foil and warming them in the oven.
  8. Serve the Pollo Fajitas by placing a generous portion of the chicken, peppers, and onions onto a warmed tortilla.
  9. Top with your preferred optional toppings such as shredded cheese, sour cream, guacamole, salsa, chopped cilantro, and a squeeze of lime.
  10. Fold the tortilla around the filling to create a fajita and enjoy!
