Peanut Butter–Banana Pancakes

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

These fluffy pancakes are bursting with the flavours of bananas and peanut butter. A stack of these drizzled in syrup is just what we crave on a lazy Saturday morning. We like these topped with extra bananas and peanut butter chips, but serve with your favourite pancakes fixings, if you prefer.

Makes about sixteen 4-inch pancakes

Prep time: 15 minutes
Cooking time: 4 to 5 minutes per batch

 

INGREDIENTS

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • 1 Tbsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp fine sea salt
  • 2 large eggs
  • 1 ¼ cups whole milk
  • ½ cup unsalted butter, melted then cooled slightly
  • 1 tsp vanilla extract
  • 2 bananas, peeled and sliced
  • 2 Tbsp unsalted butter, softened, or vegetable oil for frying
  • ⅓ cup peanut butter chips
  • Additional peeled, sliced bananas and peanut butter chips for garnish
  • Icing sugar for dusting
  • Maple syrup for serving

 

INSTRUCTIONS

  1. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt. Set aside.
  2. In a medium bowl, beat the eggs. Whisk in the milk, melted butter, and vanilla extract.
  3. Add the milk mixture to the flour mixture, whisking until the batter is smooth. Stir in the banana slices.
  4. Heat a griddle or large skillet over medium heat, then grease with a little of the butter or oil.
  5. Drop the batter onto the griddle, using about ¼ cup of the batter for each pancake. Sprinkle a few peanut butter chips over each pancake. Cook until bubbles appear on the surface, 2 to 3 minutes.
  6. Flip the pancakes, then cook until golden brown on the bottom, about 2 minutes.
  7. Place the cooked pancakes on a baking sheet or plate lined with foil and cover with more foil to keep them warm while you cook the rest.
  8. Top the pancakes with additional banana slices and peanut butter chips and a dusting of icing sugar. Serve drizzled with maple syrup.

 

CHANGE IT UP

  • Instead of sliced bananas, add 1 cup fresh blueberries, raspberries, or sliced strawberries to the batter.
  • Use 1 cup whole wheat or whole-grain spelt flour in place of 1 cup of the all-purpose flour.
  • Replace the peanut butter chips with semi-sweet chocolate chips or toasted, chopped walnuts.
  • Replace half of the melted butter with applesauce.
