Makes about 3 cups pancake mix; enough for about twenty-four 4-inch pancakes

INGREDIENTS
- 2 ½ cups all-purpose flour
- ⅓ cup icing sugar, sifted
- 3 Tbsp baking powder
- 2 tsp baking soda
- 1 tsp fine sea salt
INSTRUCTIONS
- In a 4-cup Mason jar, layer all the ingredients in the order listed.
- Seal the jar, then write the following instructions on a label and tie it around the jar.
- Pour this mix in a large mixing bowl.
- Whisk in 1 ¼ cups of milk, 3 eggs and 5 tablespoonfuls of melted butter.
- Heat a griddle or large skillet over medium heat.
- Drop the batter onto the griddle, using ¼ cup of the batter per pancake.
- Cook until bubbles appear on the surface of the pancakes, 1 to 2 minutes.
- Flip the pancakes, then cook for 1 to 2 minutes.
