The history of hot wings can be traced back to the city of Buffalo, New York, where the iconic Buffalo-style wings were created in the 1960s. These original wings were typically coated in a spicy cayenne pepper sauce and served with celery and blue cheese dressing.

The concept of adding a citrus twist to hot wings evolved as chefs and home cooks experimented with different flavor profiles. The addition of orange and pecans brings a unique and delectable dimension to this beloved dish, adding sweetness, nuttiness, and a touch of acidity to the traditional spicy wing recipe.

INGREDIENTS

  • 2 pounds chicken wings, separated into drumettes and flats
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • Vegetable oil, for frying

 

FOR THE ORANGE-PECAN SAUCE

  • 1/2 cup orange juice
  • Zest of one orange
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 2 tablespoons hot sauce (adjust to taste)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon butter
  • 1/2 cup chopped pecans

 

INSTRUCTIONS

  1. In a mixing bowl, combine the flour, salt, paprika, and black pepper. Mix well to create a seasoned coating for the chicken wings.
  2. Dredge the chicken wings in the flour mixture, ensuring that they are evenly coated. Shake off any excess flour.
  3. In a deep skillet or frying pan, heat vegetable oil to a temperature of 350°F (175°C) for frying.
  4. Carefully place the coated chicken wings in the hot oil, working in batches to avoid overcrowding the pan. Fry the wings for approximately 10-12 minutes or until they turn golden brown and crispy. Flip them occasionally for even cooking.
  5. Once cooked, transfer the fried wings to a paper towel-lined plate to drain any excess oil.
  6. In a small saucepan, combine the orange juice, orange zest, honey, soy sauce, hot sauce, and Dijon mustard. Bring the mixture to a simmer over medium heat, stirring occasionally.
  7. Reduce the heat to low and add the butter to the saucepan. Stir until the butter has melted and the sauce has thickened slightly.
  8. Stir in the chopped pecans, allowing them to infuse their nutty flavor into the sauce.
  9. Dip the fried chicken wings into the Orange-Pecan sauce, ensuring they are coated evenly. For a spicier flavor, brush the sauce onto the wings.
  10. Arrange the wings on a serving platter and garnish with additional orange zest or chopped pecans, if desired.
  11. Serve the Orange-Pecan Hot Wings immediately, accompanied by celery sticks, carrot sticks, and a creamy dip of your choice.
