INGREDIENTS

  • 2 pounds ground beef
  • 1 large sweet onion, chopped
  • 1 medium sweet red pepper, finely chopped
  • 1 medium sweet yellow pepper, finely chopped
  • 2 cans (16 ounces each) chili beans, undrained
  • 2 cans (14½ ounces each) stewed tomatoes, drained
  • ½ cup tomato juice
  • 2 jalapeno peppers, seeded and minced
  • 2 garlic cloves, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon cayenne pepper

 

INSTRUCTIONS

  1. In a large skillet, cook the ground beef, onion, and sweet peppers over medium heat until the beef is no longer pink. Drain the excess fat.
  2. Transfer the cooked beef and vegetables to a 4- or 5-quart slow cooker.
  3. Stir in the chili beans, drained stewed tomatoes, tomato juice, minced jalapeno peppers, minced garlic, ground cumin, chili powder, salt, and cayenne pepper. Mix well to combine all the flavors.
  4. Cover the slow cooker and cook on low heat for 5-6 hours, allowing the flavors to meld together and the chili to heat through.
  5. Ladle the Montana Wildfire Chili into bowls and serve hot. Garnish with your favorite toppings, such as shredded cheese, diced onions, sour cream, or fresh cilantro. Enjoy this robust and comforting chili as a main course or alongside cornbread or crusty bread for a complete meal.
