About

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Mexican Fried Corn, also known as “Elote,” is a popular and delicious side dish that showcases the vibrant flavors of Mexican cuisine. This dish features fresh corn kernels cooked with diced onion, butter, chopped green chilies, and a touch of seasoning. The result is a savory and slightly spicy corn dish that is both comforting and flavorful. Mexican Fried Corn is often served as a side dish or can be enjoyed as a filling for tacos or quesadillas. Let’s delve into the history, story, and step-by-step instructions to make this delightful dish.

Corn has been a staple food in Mexico for centuries and holds great cultural significance. Mexican cuisine incorporates corn in various traditional dishes, and Mexican Fried Corn is one of them. This dish draws inspiration from “Elote,” a popular street food in Mexico that consists of grilled corn on the cob slathered with mayonnaise, cheese, chili powder, and lime juice.

Mexican Fried Corn takes the essence of Elote and transforms it into a versatile and easy-to-make side dish. The combination of sweet corn, savory onions, mild green chilies, and butter creates a delightful medley of flavors that beautifully complements the natural sweetness of the corn.
