INGREDIENTS

  • 1 tablespoon bacon drippings
  • ¾ cup long-grain white rice
  • ½ cup chopped onion
  • 1 garlic clove, minced
  • 3 small canned tomatoes, diced
  • 2 tablespoons tomato juice
  • 2 cups hot water
  • ½ teaspoon salt

 

INSTRUCTIONS

  1. In a skillet, heat the bacon drippings over medium-high heat.
  2. Add the long-grain white rice to the skillet. Cook and stir the rice until it turns a golden brown color. This process helps enhance the flavor of the rice.
  3. Add the chopped onion and minced garlic to the skillet. Stir and cook the mixture for an additional 3 minutes, allowing the onion and garlic to soften and release their flavors.
  4. Stir in the diced canned tomatoes and tomato juice. These ingredients contribute to the vibrant red color and tangy flavor of the Spanish rice.
  5. Pour in the hot water and add the salt. Stir all the ingredients together to ensure they are well combined.
  6. Cook the rice uncovered on medium heat for 20 minutes, stirring only once after the first 10 minutes of cooking. This allows the rice to absorb the flavors and cook evenly.
  7. Check the doneness of the rice by tasting a few grains from the top. If the rice is still firm, add a little water, cover the skillet, and cook for an additional 5 minutes.
  8. Once the rice is cooked to your desired texture, remove the skillet from heat and fluff the rice gently with a fork.
