INGREDIENTS

  • 1 scant cupful sugar
  • 6 tablespoonfuls Crisco
  • 1 cupful milk
  • 2 eggs
  • 2 cupfuls flour
  • 3 teaspoonfuls baking powder
  • 1 teaspoonful salt
  • 1 teaspoonful vanilla extract

 

INSTRUCTIONS

  1. Creaming Crisco and Sugar: In a mixing bowl, cream together Crisco and sugar until well combined. This creates a base for the cake batter.
  2. Adding Beaten Eggs: Incorporate the well-beaten eggs into the Crisco and sugar mixture. Mix until the eggs are fully integrated.
  3. Sifting Dry Ingredients: In a separate bowl, sift together the dry ingredients: flour, baking powder, and salt. Sifting helps ensure a uniform distribution of these ingredients.
  4. Alternating with Milk: Gradually add the dry ingredients to the Crisco and egg mixture, alternating with the milk. This step ensures that the batter is well-mixed and smooth.
  5. Flavoring the Batter: Stir in the vanilla extract, adding a touch of aroma and flavor to the cake batter.
  6. Filling the Pans: Divide the batter evenly into Criscoed and floured gem pans. These small pans are perfect for creating individual-sized cakes.
  7. Baking: Bake the cakes in a moderately hot oven for approximately fifteen minutes. The cakes will rise, become golden brown, and develop a delicious aroma.
  8. Serving: Once the Lunch Cakes are baked to perfection, allow them to cool slightly before serving. These cakes are best enjoyed fresh, whether as a standalone treat or paired with a cup of tea or coffee.
