INGREDIENTS

  • 1 cupful sugar
  • 3/4 cupful Crisco
  • 1/2 cupful cold water
  • 1 teaspoonful vanilla extract
  • 2 1/2 cupfuls flour
  • 2 1/2 teaspoonfuls baking powder
  • 1/2 teaspoonful salt
  • 6 yolks of eggs

 

For Filling or Frosting:

  • 1 cupful sugar
  • 1/2 cupful boiling water
  • 1 teaspoonful vanilla extract
  • 1/2 cupful chopped raisins
  • 2 whites of eggs
  • Pinch cream of tartar
  • 1/2 cupful chopped nut meats
  • 5 chopped figs

 

INSTRUCTIONS

Preparing the Cake:

  1. Creaming Crisco and Sugar: In a mixing bowl, cream Crisco and sugar together until well combined.
  2. Adding Dry Ingredients: Sift together the flour, baking powder, and salt. Gradually add the dry ingredients to the Crisco and sugar mixture, alternating with the cold water.
  3. Incorporating Vanilla and Egg Yolks: Add the vanilla extract and the beaten egg yolks to the batter. Mix until the batter is smooth and well incorporated.
  4. Dividing and Baking: Divide the batter evenly between two Criscoed and floured layer cake tins. Bake in a moderate oven for approximately twenty-five minutes, or until the cakes are golden and a toothpick inserted into the center comes out clean.

 

Creating the Filling or Frosting:

  1. Preparing the Filling: In a saucepan, combine sugar and boiling water. Stir until the sugar dissolves and the mixture boils. Add cream of tartar and continue boiling until the mixture forms a soft ball when tested in cold water or reaches 240°F.
  2. Mixing the Meringue: In a separate bowl, beat the egg whites until stiff peaks form.
  3. Incorporating Flavors: Gradually pour the hot sugar mixture onto the beaten egg whites in a steady stream, while continuing to beat. Add vanilla extract, chopped raisins, chopped nut meats, and chopped figs. Beat until the mixture thickens and becomes creamy.

 

Assembling the Cake:

  1. Layering and Filling: Once the cake layers are completely cooled, spread a generous amount of the filling between the layers.
  2. Frosting the Cake: Use the remaining filling to frost the top and sides of the cake, creating a luxurious and decadent finish.
