INGREDIENTS

  • 4 eggs
  • 1 cupful sugar
  • 2 tablespoonfuls melted Crisco
  • 2 cupfuls flour
  • 1 teaspoonful baking powder
  • 1/4 teaspoonful salt
  • 4 tablespoonfuls milk
  • Jelly or preserves
  • 1 teaspoonful lemon extract

 

INSTRUCTIONS

  1. Beating Eggs and Sugar: In a mixing bowl, beat eggs and sugar together for about twenty minutes. This step is essential to achieve the desired light and fluffy texture of the cake.
  2. Sifting Dry Ingredients: Remove the beater and sift in flour, baking powder, and salt. Sifting ensures a smooth and even cake batter.
  3. Adding Liquid Ingredients: Mix in melted Crisco, milk, and lemon extract. These ingredients enhance the flavor and texture of the cake.
  4. Preparing the Baking Tin: Grease a large flat tin with Crisco and lightly dust it with flour. This prevents the cake from sticking to the pan.
  5. Baking: Pour the cake batter into the prepared tin and spread it out evenly. Bake in a moderately hot oven for approximately twelve minutes.
  6. Rolling: Once the cake is baked, turn it out onto sugared paper. Immediately spread a layer of jelly or preserves over the cake. Roll up the cake carefully, starting from one end.
  7. Presentation: The rolled cake can be sliced and served as is or garnished with powdered sugar. The visual appeal of the rolled cake with its colorful filling makes it an eye-catching dessert.
