INGREDIENTS

  • 1 ½ cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 (14-ounce) can sweetened condensed milk
  • 1/2 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest (optional)
  • 2 cups whipped cream or whipped topping
  • Sliced lemons, for garnish (optional)

 

INSTRUCTIONS

  1. In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.
  2. Press the crumb mixture into the bottom and sides of a 9-inch pie dish, creating an even crust. Use the back of a spoon or the bottom of a glass to press it firmly.
  3. In a separate large bowl, whisk together the sweetened condensed milk, freshly squeezed lemon juice, and lemon zest (if using) until well combined.
  4. Gently fold in the whipped cream or whipped topping until the mixture is smooth and creamy. Ensure that there are no streaks of whipped cream remaining.
  5. Pour the lemonade filling into the prepared graham cracker crust, spreading it evenly.
  6. Place the pie in the refrigerator or freezer to chill and set. Refrigerate for at least 4 hours or freeze for 2-3 hours, or until the filling is firm and set.
  7. Once the pie is fully chilled and set, remove it from the refrigerator or freezer.
  8. If desired, garnish the top of the pie with sliced lemons for an attractive presentation.
  9. Slice and serve the Lemonade Icebox Pie chilled, enjoying the cool and tangy flavors of this refreshing dessert.
