I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

I think this makes a particularly good side dish with chicken or fish.

Yield: 4 servings, each with 9 grams of carbohydrates and 3 grams of fiber, for a total of 6 grams of usable carbs and 2 grams of protein.

 

INGREDIENTS 

  • 1 bag (1 pound) frozen green beans, French cut or crosscut, thawed
  • 1/4 cup olive oil
  • 1 clove garlic, crushed
  • 1 tablespoon lemon juice
  • 1/4 teaspoon pepper

 

INSTRUCTIONS

  1. Over high heat, stir-fry the green beans in the olive oil until they’re tender-crisp.
  2. Stir in the crushed garlic, lemon juice, and pepper.
  3. Cook for just another minute, making sure not to overcook the beans.
  4. Serve hot and enjoy!
