I think this makes a particularly good side dish with chicken or fish.
Yield: 4 servings, each with 9 grams of carbohydrates and 3 grams of fiber, for a total of 6 grams of usable carbs and 2 grams of protein.
INGREDIENTS
- 1 bag (1 pound) frozen green beans, French cut or crosscut, thawed
- 1/4 cup olive oil
- 1 clove garlic, crushed
- 1 tablespoon lemon juice
- 1/4 teaspoon pepper
INSTRUCTIONS
- Over high heat, stir-fry the green beans in the olive oil until they’re tender-crisp.
- Stir in the crushed garlic, lemon juice, and pepper.
- Cook for just another minute, making sure not to overcook the beans.
- Serve hot and enjoy!
