INGREDIENTS
- 1/4 cup unsweetened shredded coconut
- 1 cup cream cheese
- 1 Tbsp pure lemon extract
- Natural sweetener of your choice, to taste
- 1/4 cup butter
INSTRUCTIONS
- In a bowl, combine cream cheese, natural sweetener, and lemon extract. Blend all ingredients together well with a mixing spoon. Place bowl in the refrigerator for 15-20 minutes.
- In a separate bowl, place unsweetened shredded coconut.
- Roll the lemon batter into 16 equal balls.
- Dip each ball into the coconut and place on a serving pan.
- Refrigerate the balls for at least 3-4 hours.
- Serve chilled.
