INGREDIENTS

  • 1/4 cup unsweetened shredded coconut
  • 1 cup cream cheese
  • 1 Tbsp pure lemon extract
  • Natural sweetener of your choice, to taste
  • 1/4 cup butter

 

INSTRUCTIONS

  1. In a bowl, combine cream cheese, natural sweetener, and lemon extract. Blend all ingredients together well with a mixing spoon. Place bowl in the refrigerator for 15-20 minutes.
  2. In a separate bowl, place unsweetened shredded coconut.
  3. Roll the lemon batter into 16 equal balls.
  4. Dip each ball into the coconut and place on a serving pan.
  5. Refrigerate the balls for at least 3-4 hours.
  6. Serve chilled.
