INGREDIENTS
- Fresh lime zest from 2 organic limes
- 1 cup extra virgin coconut oil, softened
- 3/4 cup coconut butter, softened
- 20 drops Erythritol extract (or some other natural sweetener of your choice)
- Pinch of salt
PREPARATION
- Soften the coconut butter and coconut oil at room temperature.
- Zest the organic limes.
- In a bowl, mix all the ingredients and stir well. Make sure that the lime zest and Erythritol extract are evenly distributed.
- Prepare 16 mini muffin cups.
- Refrigerate the mixture for 2 hours until firm.
- Once firm, remove from the refrigerator and serve. Keep refrigerated.
