I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

 

INGREDIENTS:

  • 2 cups cooked chickpeas (garbanzo beans)
  • 1/4 cup (59 ml) fresh lemon juice, about 1 large lemon
  • 1/4 cup (59 ml) tahini
  • Half of a large garlic clove, minced
  • 2 tbsp. olive oil or cumin oil, plus more for serving
  • 1/2 to 1 tsp. salt
  • 1/2 tsp. ground cumin
  • 2 to 3 tbsp. water
  • Dash of ground paprika for serving

 

INSTRUCTIONS:

  1. Combine tahini and lemon juice in a food processor and blend for 1 minute.
  2. Add the olive oil, minced garlic, cumin, and salt to the tahini and lemon mixture. Process for 30 seconds, scrape the sides, and then process for another 30 seconds.
  3. Add half of the chickpeas to the food processor and process for 1 minute. Scrape the sides, add the remaining chickpeas, and process for 1 to 2 minutes or until the mixture becomes smooth and creamy.
  4. If the hummus is too thick, add 2 to 3 tablespoons of water and continue processing until the desired consistency is achieved.
  5. Transfer the hummus into a serving bowl, then drizzle about 1 tablespoon of olive oil over the top.
  6. Sprinkle with a dash of ground paprika for added flavor and presentation.
  7. Serve with pita bread, fresh vegetables, or as a spread for sandwiches and wraps. Enjoy your delicious homemade hummus!

Here are some variations of the classic hummus recipe:

1. Roasted Red Pepper Hummus:

  • Add 1/2 cup of roasted red peppers (you can use store-bought or roast them yourself) to the basic hummus recipe before blending. This will give your hummus a delicious smoky flavor and a vibrant red color.

2. Spicy Hummus:

  • Add a pinch of cayenne pepper or a dash of hot sauce to the basic hummus recipe to give it a kick of heat. You can adjust the amount of spice according to your preference.

3. Garlic and Herb Hummus:

  • Increase the amount of garlic in the recipe to 2 or 3 cloves for a more pronounced garlic flavor. Add fresh herbs like parsley, cilantro, or basil to the blender along with the other ingredients for a refreshing twist.

4. Sun-Dried Tomato Hummus:

  • Soak a handful of sun-dried tomatoes in warm water to soften them, then add them to the blender along with the other ingredients. The sun-dried tomatoes will add a rich and tangy flavor to the hummus.

5. Avocado Hummus:

  • Add half of a ripe avocado to the basic hummus recipe before blending. The avocado will make the hummus extra creamy and add a subtle, buttery flavor.

6. Beetroot Hummus:

  • Roast or boil a medium-sized beetroot until tender, then blend it with the other hummus ingredients. This will give your hummus a beautiful pink color and a slightly sweet taste.

7. Spinach Hummus:

  • Blanch a handful of spinach leaves and add them to the blender along with the other ingredients. The spinach will add a vibrant green color and a boost of nutrients to the hummus.

8. Curry Hummus:

  • Add a teaspoon of curry powder or a blend of your favorite curry spices to the basic hummus recipe. This will give your hummus a warm and aromatic flavor profile.

9. Lemon and Herb Hummus:

  • Increase the amount of lemon juice in the recipe for a tangier hummus. Add fresh herbs like dill, mint, or thyme for a refreshing and zesty twist.
