I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Okay, it’s not haute cuisine, but I’ll bet your kids will eat it without complaining.

Yield: 1 serving, with 8 grams of carbohydrates and 1 gram of fiber, for a total of 7 grams of usable carbs and 31 grams of protein.

 

INGREDIENTS

  • 1 tablespoon butter
  • 1 hot dog, sliced into rounds
  • 1/2 small onion, chopped
  • 3 eggs, beaten
  • 1/4 cup shredded Cheddar cheese

 

INSTRUCTIONS 

  1. Melt the butter in a heavy skillet over medium heat.
  2. Add the hot dog slices and onion, and saute until the onion is limp and the hot dog slices are starting to brown.
  3. Add the eggs, and scramble until half-set.
  4. Add the cheese, and continue to scramble until the eggs are set and the cheese is melted.
  5. Serve hot.
