INGREDIENTS

  • 1 cupful strained honey
  • 1 cupful brown sugar
  • 2 tablespoonfuls Crisco (or any vegetable shortening)
  • 1/2 cupful cream
  • 1/4 teaspoonful salt
  • Pinch of cream of tartar
  • 1 teaspoonful lemon extract

 

INSTRUCTIONS

  1. In a saucepan, combine the Crisco, salt, honey, cream, and brown sugar.
  2. Stir the mixture over a slow fire until all the ingredients are dissolved and well combined.
  3. Add the pinch of cream of tartar to the mixture.
  4. Continue to cook the mixture, stirring constantly, until it reaches the hard ball stage. This stage is reached when the mixture forms a hard ball when tested in cold water or reaches a temperature of 252°F (122°C) on a candy thermometer.
  5. Remove the saucepan from the heat and stir in the lemon extract. This will infuse the squares with a delightful citrus aroma.
  6. Grease a tin or pan with Crisco to prevent sticking.
  7. Pour the candy mixture into the Criscoed tin.
  8. Before the mixture cools completely, use a knife to mark it into squares or pieces. This should be done while the candy is still pliable.
  9. Allow the candy to cool completely and set.
  10. Once the candy is completely cooled, break it into individual squares along the marked lines.
