Figs have a long history as a revered fruit, enjoyed in various forms throughout different cultures. The natural sweetness and unique texture of figs make them a versatile ingredient in both savory and sweet dishes. The marriage of figs with fudge-making techniques creates Fig Fudge, a sweet treat that celebrates the fusion of flavors.

Fudge-making has its roots in the late 19th century, with stories of its creation often associated with college students and candy shops. The process involves precisely heating and cooling sugar syrup to create a creamy, indulgent texture. Fig Fudge adds a twist to this tradition by introducing the delightful flavor and texture of chopped figs.

The art of fudge-making has been passed down through generations, with families and communities coming together to create cherished treats that evoke memories of special occasions and gatherings. Fig Fudge continues this legacy, allowing individuals to experience the joy of crafting their own sweet masterpieces.

INGREDIENTS

  • Pinch of cream of tartar
  • 1/4 lb. chopped figs
  • 1 lb. brown sugar
  • Pinch of salt
  • 1 tablespoonful Crisco (or any vegetable shortening)
  • 1 cupful water
  • 1 teaspoonful lemon extract

INSTRUCTIONS

  1. Begin by washing and drying the figs. Once dried, chop them into small pieces. This will enhance their integration into the fudge mixture.
  2. In a saucepan, combine the brown sugar and water, then dissolve the sugar.
  3. Add the Crisco and pinch of cream of tartar to the sugar and water mixture. Stir to incorporate the ingredients.
  4. Place the saucepan over medium heat and bring the mixture to a boil. Stir the mixture continuously to ensure even heating.
  5. Once boiling, add the chopped figs to the mixture. Continue to stir while the mixture reaches the soft ball stage. This stage is reached when the mixture forms a soft ball when tested in cold water or reaches a temperature of 240°F (115.5°C) on a candy thermometer.
  6. Remove the saucepan from the heat and add the lemon extract and a pinch of salt. Stir to combine the flavors.
  7. Allow the mixture to cool for about five minutes. During this time, the mixture will begin to develop a crystalline texture.
  8. After five minutes, stir the mixture vigorously until it fully “grains.”
  9. Grease a tin or pan with Crisco to prevent sticking.
  10. Quickly pour the fudge mixture into the Criscoed tin.
  11. Once the fudge has cooled partially, use a knife to mark it into squares. This should be done while the fudge is still pliable.
  12. Allow the fudge to cool completely and set.
  13. Once the fudge is completely cooled, break it into individual squares along the marked lines.
