Ingredients:

  • 4 boneless, skinless chicken thighs
  • 4 cups chicken broth
  • 4 cups water
  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste
  • 2 teaspoons grated ginger
  • 2 cloves garlic, minced
  • 8 ounces dried ramen noodles
  • 4 green onions, thinly sliced
  • 2 carrots, peeled and sliced
  • 1 cup sliced shiitake mushrooms
  • 2 tablespoons sesame oil
  • 2 tablespoons sake or rice wine
  • Soft boiled eggs, for serving
  • Sriracha, for serving (optional)

Instructions:

In a large pot or Dutch oven, bring the chicken broth, water, soy sauce, miso paste, ginger, and garlic to a boil over high heat.
Reduce heat to medium and add chicken to the pot. Simmer until cooked through, about 10-15 minutes.
Remove chicken from the pot and shred into bite-sized pieces.
Return the pot to medium heat and add the noodles, green onions, carrots, mushrooms, sesame oil, and sake. Cook until the noodles are tender, about 3-5 minutes.
Divide the noodles and broth among four bowls. Top each bowl with cooked chicken and a soft boiled egg. Serve with sriracha, if desired. Enjoy!
